Wild Blueberry & Vanilla Chia Pudding


Chia pudding is a delicious, make ahead breakfast option or perfect on-the-go snack. Chia seeds are loaded with protein, fiber, minerals and omega fatty acids. Wild blueberries are low in sugar, antioxidant-rich, and can help restore gut health. This pudding will sustain you and yet is light enough on the belly not to cramp your style at yoga practice (because that’s where we are going after we eat this…right?) 😉

Serves 4


2 cups unsweetened Flax milk (or almond milk)
1/2 tsp vanilla extract
4 packets Stevia (I use this brand), or 10-20 drops liquid stevia
1/4 tsp ground cinnamon
3/4 cup frozen organic wild blueberries, rinsed and drained
1/2 cup chia seeds

Optional Toppings:

Pinch of cinnamon
Pink Himalayan Salt
Toasted pecans


Combine flax milk, vanilla extract, stevia, and cinnamon in a bowl and whisk to combine.  Stir in wild blueberries and chia seeds and ladle into 4 small bowls or mason jars.  Store refrigerated for 1 to 2 hours to set (or overnight).  Delicious sprinkled with additional cinnamon, pink Himalayan salt, and toasted pecans.
