Black-Eyed Pea & Parsnip Stew


This delicious vegan stew comes together in a snap for a nutritious and satisfying meal. Parsnips are in the carrot family, and have a mild and almost potato-like flavor, making them an excellent addition to this hearty stew.  Black-eyed peas are loaded with protein and fiber, potassium, iron, and folate – packing the nutritional punch that your body deserves.  Simmered in a savory coconut milk base, this stew is guaranteed to satisfy even the meat-lovers in your family!  <3

Serves 4-6


1-2 TBS avocado oil
1 bunch scallions, sliced and separated (white part for the stew, green part for garnish)
3 parsnips, chopped
½ lb fresh green beans, cut into bite-size pieces
1 medium red bell pepper, chopped
1 lime, zested then cut in half (reserve half for garnish)
1 (13.5oz) can Simple coconut milk *
2 (15oz) cans black-eyed peas, rinsed and drained
2 tsp garlic powder
2 tsp chili powder
2 tsp celtic sea salt
Cayenne pepper (several dashes – optional)
Jasmine rice, cooked according to package directions


Sliced green onions
Extra virgin olive oil
Squeeze of lime
Salt & pepper


In a large skillet or stock pot, sauté white scallions, parsnips, and green beans in avocado oil over medium to medium high heat, until parsnips and green beans begin to soften (about 10 minutes). Add chopped red bell pepper, juice of ½ lime, and lime zest and continue sautéing for about 3 minutes more. Add coconut milk, black-eyed peas, and spices, and bring mixture to boil over medium-high heat, then reduce to simmer, stirring occasionally for about 10-20 minutes or until sauce has thickened and vegetables are cooked through.

Serve over jasmine rice, garnished with green onions, olive oil, a squeeze of fresh lime juice, and salt & pepper to taste.

* You can use regular coconut milk if you prefer, but it may make the sauce too thick… you can adjust the consistency with added coconut milk or other milk alternative. I prefer the Simple coconut milk with no guar gum added (it can cause digestive distress in sensitive people). I order a case at a time from Amazon to keep in the pantry – it’s a great staple to have on hand.
