Beautiful Beet Dip


Sweet, savory, and oh so vibrant – I almost named this one hot pink dip!  This delicious dip is made with buttery white beans and fresh organic beet juice, so it’s loaded with protein, fiber, and antioxidants to keep you nourished.  Beets are especially good for helping the liver detoxify, and even if you’re not a fan of beets, you won’t mind them in this dip – it has been tested and approved by a 5 and 7-year-old!  Delicious with crackers or chopped veggie rounds (such as the watermelon radish you see in the picture).  Nom and Namaste! <3

Prep Time: 10 minutes
Makes: About 3 cups


2 15oz cans butter beans, rinsed and drained
3 TBS tahini (sesame seed paste)
Zest & juice of 1 lime
¼ cup extra virgin olive oil
Juice of 1 large beet (or about ¼ cup beet juice)
1 – 1.5 tsp fine ground sea salt (or to taste)


Extra virgin olive oil
Fresh chopped cilantro
Additional lime zest


Combine all ingredients in a large food processor or blender, and process until desired consistency is reached, scraping down the sides as needed. Serve with veggies and crackers. Delicious topped with a drizzle of olive oil and chopped fresh cilantro!
