I love roasted asparagus, but as an (occasionally) lazy yogi I don’t always feel like putting in the time or effort! This is one of my “fast-food” recipes – super tasty, takes less than 5 minutes to make, and you can even eat it in your car if miss that ole’ drive through feeling 😉 ! So what’s with all the hype about raw foods? They are chock full of nutrients and enzymes in their most natural state, as opposed to being destroyed or denatured by the heat required for cooking. That means maximum nutrient bioavailability for your body… and in return, your body will feel OMazing!!
Prep Time: 5 minutes
1 medium-ripe avocado
Juice of 1 lime (or lemon)
½ bunch asparagus, washed and chopped
1 cup packed spinach (or about 1 handful)
2-3 cups filtered water (or to desired consistency)
Himalayan sea salt
Extra virgin olive oil
Crushed red pepper flakes
Thinly sliced asparagus
Combine all ingredients in a Nutribullet or blender and process until smooth. Top with desired garnishes and serve immediately.
