Chocolate Chia Pudding

Chocolate for breakfast is one of my favorite things… and since I’m not a morning person I need all the help I can get 😉  Rolling out of bed is indeed a little easier when you have a guilt-free yet decadent tasting breakfast waiting!!  This chia pudding is delicious, loaded with fiber, protein, and essential fatty acids – and cacao has long been revered for its health benefits which include a tasty mega-dose of antioxidants (40 times more than blueberries), iron, and calcium.  Top with chocolate chips (the kids will love it!) or with shredded coconut and pecans if you want to go German chocolate cake style…  Nom! ❤

Prep Time: 5 minutes (active) + 30 minutes (or overnight) to set
Serves 4

Ingredients:

2 cups unsweetened Flax milk (or other milk alternative)
1/2 teaspoon vanilla bean powder (or pure vanilla extract)
1-2 teaspoons pure Stevia extract powder (or to taste)
1/4 teaspoon ground cinnamon (optional)
2 tablespoons cacao powder
1/2 cup chia seeds
1/8 teaspoon sea salt (or to taste)

Topping Ideas:

Vegan chocolate chips
Chopped toasted pecans
Shredded coconut flakes

Directions:

Combine flax milk, vanilla bean powder, stevia, cacao, and cinnamon in a bowl and whisk until well combined. Stir in the chia seeds and sea salt.  Taste test the mixture for sweetness, and make any adjustments to your liking before proceeding to the next step. Pour the mixture into four small bowls with lids. Refrigerate for 30 to 60 minutes, or until desired consistency is set (or make the night before for a quick and easy breakfast). Top with your choice of garnishes and enjoy!
