Sweet Dijon Raw Sprouted Salad


This delightful little salad makes for a delicious light lunch, or accompaniment to any meal.  Sprouted greens are nutrient-dense, loaded with minerals and enzymes to nourish your body and aid in digestion.  I used sprouted pea greens in this recipe, but sunflower sprouts would also work well, or any sprouted greens you prefer.  The dijon dressing is sweet and tangy, reminiscent of honey dijon but without the sugar – perfect for anyone on a low-sugar diet or concerned about their carb intake!

Prep Time: 10 minutes
Serves: 4


3 ounces (85 grams) sprouted pea greens (or any other sprouted greens), washed
2 cups arugula (or other leafy greens), washed
4 tablespoons organic dijon mustard (I used Cadia brand)
2 tablespoons water
20 drops liquid stevia extract (KAL brand)
Salt (to taste)

Optional toppings:

Grated carrots
Cherry tomatoes

Directions: Combine washed pea greens (or other sprouts) with arugula in a large bowl. Prepare the dressing by mixing dijon mustard, water, liquid stevia, and salt in a separate bowl until well combined, adding additional water if needed. Pour over the greens and toss well to combine. Top with grated carrots and tomatoes if desired. Serve immediately.
