I’m going to be honest here – there are days when I was craving something crunchy and salty and devoured an entire bag of potato chips… and then lived to regret it… 😉 But these kale chips make for a deliciously crispy, guilt-free alternative… so go ahead and eat the whole bunch! Kale is considered one of the world’s healthiest foods – high in fiber, and loaded with essential vitamins and minerals, it makes for an excellent post-yoga snack (or middle of the night snack, if that’s your bag, baby)! P.S. My kids devoured these, so if you’re looking for a way to sneak more greens into their diet, then look no further… Nom! ♥
Attributes: Vegan, gluten-free, grain-free, sugar-free, low-fat
Prep Time: 10 minutes + baking time
1 head green or lacinato kale, washed and stems removed
1 tablespoon grapeseed, sesame, or avocado oil
Fine ground Celtic sea salt to taste
Garlic powder to taste (optional)
Preheat oven to 375° degrees (Fahrenheit). Combine kale leaves, oil, salt, and garlic powder (if using) in a large bowl. Use your hands to mix well, ensuring the kale is evenly coated with the oil. Spread out onto a parchment paper-lined baking sheet, and bake for approximately 10-20 minutes, or until chips are thoroughly dehydrated and crispy.
Consume immediately, or store in an airtight container for up to a week.
